"The Bright, Zesty Soul of Japanese Citrus."

In Japan, citrus is more than a fruit—it is a season, a ritual, and a "cleaner" for the palate. This collection features three legendary citrus varieties from the whirlpool-beaten coasts of Tokushima, the hidden valleys of Wakayama, and the mountain groves of Oita.

The Collection: The Zest of Japan

01. Granulated Yuzu Kosho (Oita)

The "God of Yuzu" Heritage

  • The Story: Sourced from the "God of Yuzu," these premium fruits are harvested at their aromatic peak. Crafted by the pioneer Kawatsu family, this version honors the original 50-year-old recipe.

  • Flavor Profile: A sharp, refreshing burst of citrus fragrance paired with a clean, spicy kick from green chilis.

  • Texture: Granulated (Tsubu). Unlike smooth pastes, these tiny zest grains preserve their oil sacs, creating an "aroma explosion" when bitten.

  • Best For: Sashimi, Yakitori (grilled chicken), Miso soup, and as a sophisticated condiment for steaks.

02. Jabara Pepper (Wakayama)

The Legend of "Banishment of Evil"

  • The Story: "Jabara" literally means "To Banish Evil". This rare fruit originated from a single tree in Kitayama, the only "flying territory" (enclave) village in Japan. It is blended with the rare "Shimizumori Nanba" chili from Aomori, known for its high sugar and vitamin content.

  • Flavor Profile: A sophisticated, adult flavor featuring a unique herbal bitterness and a rich, sweet umami from the rare chilis.

  • Texture: A finely ground, aromatic paste.

  • Best For: Rich, fatty meats like pork belly, Gyoza (dumplings), and as a zesty accent for dressings and hot pots.

03. Sudachi Salt (Tokushima)

The Green Spice of the Whirlpool Kingdom

  • The Story: A specialty spice from the "Oniuma" (Devilishly Delicious) series, combining the bright Sudachi citrus of Tokushima with the mellow sea salt of the Naruto whirlpools.

  • Flavor Profile: Sharper and more mineral-driven than Yuzu, this salt provides a refreshing "Umami" that enhances without masking the main ingredients.

  • Texture: A fine, seasoned salt infused with real Sudachi zest.

  • Best For: Salads, white fish sashimi, tempura, and grilled scallops.
